Raw Almond Coconut Truffles

What you’ll need:
1 1/4 cup almonds, divided 1 cup and 1/4 cup (raw unsalted)
3/4 cup dates (pitted)
3 rounded tbsp carob powder
1/2 cup coconut milk
To make it easier on your food processor, chop the almonds lightly and put 1/4 cup aside for rolling the truffles in.
- Mix all the ingredients together and add some more coconut milk if you need to.
- Place the truffle mix in the fridge and let it harden for about two hours or overnight.
- Form little truffle ball and roll in the chopped almonds you set aside.
