Celeriac Salad with Orange Juice

This is a fantastic recipe from Switzerland. You will absolutely love it. Serve the salad with some steak or chicken. It will be great for summer picnics as well.

What you will need:

  • 1/2 Celeriac
  • 1 Juicing Orange
  • couple of tbsp of home made mayo (or bought)
  • sea salt
  • garlic salt to taste
  • Optional add some diced pineapple

The easiest way to do this is with a food processor. If you don’t have one, I really encourage you to invest about $160 into a good quality food processor for quick lunches and last minute dinners.

Here we go. Clean the celeriac first. The fastest way is to cut the tough stuff off with the knife and switch to a peeler after that. It takes some practice to wrestle with the celeriac root, but it’s so worth it.

Prepare the dressing first. Take 2-3 tbsp of the mayo and mix it with the orange juice. Cut the celeriac into manageable pieces. Grate them in the food processor or by hand (I do not recommend this, too dangerous). Immediately mix the celeriac with the dressing and season to taste with some garlic salt and finish off with sea salt.

Serve this delicious salad as is or with fresh whole grain bread. This is also great for kids lunches and for afternoon snacks. I love this recipe with some grilled salmon fillet or with grilled chicken. Talking about low carbs!

The Potato conspiracy?

Why do we always hear only the bad side of the potato. Everything “they” tell you is, it makes you fat, high glycemic index, to much sugar…! What happened with all the healing properties and vitamins and minerals of the potato?

Potatoes help you to keep your acidic body in check. The Potato is a very low calorie food, high in nutrients and starch. What do you think how the potato measures up compared with fresh soft cheese, eggs and cheese if it come to vegetarian protein? Actually, the potato has more vegetarian protein than any of these choices. Only meat exceeds the potato in their bio availability of protein, but it does not attack your arteries!

Most of the vitamins and minerals are right under the skin, so if possible, get young organic potatoes and do not peel them. The best way is to bake or steam the potatoes to keep most of the vitamin C and minerals inside.

Warning about the green spots on Potatoes, they contain solanin, which is not good for our bodies. You can get head aches, sore throat, stomach aches and diarrhea. Please make sure to cut around green spots and discard it.

Claustrophobia

Claustrophobia is a fear of small places. a very smart natural Doctor ones said, that claustrophobia is a phosphorus deficiency and it can be cured by eating lots of celeriac and strawberries.

Celeriac is a root vegetable and taste delicious prepared as a raw salad. Grate it or cut matchsticks it and dress it with a light yogurt or mayonnaise salad dressing or a vinaigrette. Mmmm…

You can also make a outstanding veg soup with celeriac but make sure you DO eat the broth, cause the vitamins and minerals are cooked into the broth also.

And the very wise Doctor also said that children learn better if they eat enough phosphorus like strawberries. Try it, it can’t hurt!celeryroot2
